Gluten-free cottage cheese pancakes
These gluten-free cottage-cheese pancakes are easy, quick to make, delicious and rich in protein. A great breakfast pre- or post-workout.
Both rice flour and oat flour work perfectly fine in this recipe. Feel free to experiment with other types of GF flours (my advice is to use flours with a neutral flavour).
The nutrition break-down is per pancake and includes the baking oil.
- Ingredients
- 2 ripe bananas
- 2 eggs
- 200 g cottage cheese
- 1 tsp cream of tartar or baking powder
- 1/2 tsp baking soda
- 6-7 tbsp rice flour
- A/N oil for baking
Method
Blend all the ingredients.
Heat oil in a skillet over a medium-high heat and add 2 tbsp of batter at a time to make pancakes.
Cook until the bottom is set. Flip over and cook for another +\- 2 mins. Keep warm while you make the rest of the pancakes.
Serve the pancakes with the toppings of your choice (I like coconut yogurt and fresh berries).
