- ½ cup raisins
- ¼ cup roasted hazelnuts
- 1 teaspoon pure cocoa powder
- A tiny pinch of salt
- 100g strawberries
- 1 tablespoon agave syrup
- 1/8 teaspoon xanthan gum
Method
Prepare the chocolate mousse. Follow mine or your favorite recipe for the mousse and set it aside.
Make the hazelnut crumble: Put all the crumble ingredients into a food processor. Process until you have a sticky, crumbly texture.
Prepare the strawberry sauce: Wash the strawberries and cut them into pieces. Place the strawberries in a food processor along with the agave syrup. Blend until you achieve a smooth consistency. Add the xanthan gum and briefly pulse to combine. Keep the sauce refrigerated until ready to serve.
Serve: Scoop the mousse using an ice cream scoop and place it in the center of a deep serving bowl. Sprinkle some hazelnut crumble over the mousse. Repeat with the remaining servings. Just before serving, drizzle a little strawberry sauce over the crumble and mousse. Enjoy!
