Easy basic vegan pancakes

This is a very easy basic vegan pancake recipe. Actually, it is so easy that it is almost boring. But the good thing is that this recipe always works. Another good thing is that you don’t need any exotic ingredients. On my Instagram feed you will find many recipes (my family loves pancakes, and I love creating new pancake recipes), but this one is really basic. The proportions are easy to remember. The whole process will take approximately 20 minutes and, they taste pretty good! However, if you don’t find them sweet enough, feel free to add a little bit of sweetener of your choice (top them with maple syrup, for instance), or add a spoonful of raisins into the butter before baking.

  • Ingredients
  • • 1 ripe banana
  • • 1 tbsp flax meal
  • • ½ cup wholegrain flour (you can sub with normal flour)
  • • ½ cup soy or any other plant-based drink
  • • 1 tbsp apple mousse (optional, mainly needed for activating soda, you can sub with 1 tsp vinegar of choice
  • • 1 tbsp oil + more for baking
  • • 1tsp baking powder
  • • 1/3 tsp baking soda

Method

Mix flax meal with 2 tbsp water and let stand for 5 mins.

In a blender, process all the ingredients (or mash the banana with a fork and stir everything by hand).

Heat a little bit of oil in a non-stick frying pan over a medium-low heat and add 1 tbsp of batter into the pan at a time to make small, round pancakes.

Cook until the edges are set. Flip the pancakes and cook for another 1-2 mins until golden and cooked through. Keep warm while you cook the remaining pancakes.

Serve with berries, nuts, coconut yoghurt or any other toppings you like.
